A Marrakech cooking class is the most reliable way to understand Moroccan food from the inside. Most run within a short walk of Jemaa el-Fnaa, in the tiled courtyard kitchen of a riad down the derbs (alleys) behind the souks. You cook standing at a shared marble or zellige counter, then eat what you made at a low table or up on the roof terrace, so the setting is as much a part of the day as the recipes.

The classic menu is a chicken tagine with preserved lemon and green olives, slow-braised in a conical clay pot, alongside two or three Moroccan salads — smoky zaalouk (aubergine) and taktouka (pepper and tomato) — and a round of khobz bread. Many classes also teach couscous rolled by hand and steamed three times in a couscoussier, the way it is still done for a Friday family lunch, and finish with mint tea poured from height to build the foam.

You will grind and blend ras el hanout, learn how cumin, ginger, turmeric and sweet paprika layer into a tagine, and see why preserved lemon and saffron do the heavy lifting rather than heat — Moroccan food is fragrant, not fiery. Classes suit couples, families and solo travellers equally; children are welcome and vegetarians are easily accommodated with a vegetable tagine or a chickpea and seven-vegetable couscous.
