Saffron Honey Glaze
From Taliouine, the saffron-growing heart of the Souss valley, this simple glaze blooms precious saffron threads in warmed honey for a fragrant, golden finish brushed over roasted chicken, carrots or pastries.

Ingredients
- 150 g honey
- Generous pinch of saffron threads
- 1 tbsp warm water
- 1 tbsp butter
- A squeeze of lemon juice

Bloom the saffron
Steep the saffron threads in the tablespoon of warm water for 10 minutes to release their colour and aroma.

Warm the honey
Gently warm the honey with the butter in a small pan until the butter melts.

Stir the saffron water into the warmed honey and butter.

Add a small squeeze of lemon juice to brighten the glaze.
