A blazing-summer refresher of blended fresh watermelon with mint, lime and a pinch of salt, poured over ice. Light, hydrating and barely sweetened, it captures the Moroccan love of cooling fruit drinks in the heat, with mint tying it to the national flavour.

Watermelon & Mint Cooler

Ingredients

  • 1 kg watermelon flesh, cubed and deseeded
  • 1 handful fresh mint
  • Juice of 1 lime
  • Pinch of salt
  • 1 tbsp honey (optional)
  • Ice, to serve

Method

    Blend

    Blend the watermelon with most of the mint until smooth.

    Strain

    Strain if you prefer a clear cooler, or leave as is for more body.

    Season

    Stir in the lime juice, salt and honey if using.

    Chill

    Chill thoroughly, or blend with a little ice.

    Build

    Fill glasses with ice and a few mint leaves.

    Serve

    Pour over and serve immediately, ice-cold.
