Ingredients
- 1 kg watermelon flesh, cubed and deseeded
- 1 handful fresh mint
- Juice of 1 lime
- Pinch of salt
- 1 tbsp honey (optional)
- Ice, to serve

Blend the watermelon with most of the mint until smooth.

Strain if you prefer a clear cooler, or leave as is for more body.

Stir in the lime juice, salt and honey if using.

Chill thoroughly, or blend with a little ice.
