Moroccan Avocado Juice (Jus d'Avocat)
Thick enough to eat with a spoon, jus d'avocat is one of the great pleasures of a Marrakech juice stall — ripe avocado blended with cold milk and sugar into a pale-green shake, layered in a tall glass and crowned with chopped almonds, walnuts and sometimes a swirl of date syrup. Rich, cooling and sustaining, it is a snack and a drink in one.

Ingredients
- 2 ripe avocados
- About 400 ml cold whole milk
- 3 tbsp sugar, or to taste (or honey)
- A few ice cubes
- To finish: chopped almonds and walnuts, and a little date syrup or honey

Blend
Scoop the avocado flesh into a blender with the cold milk, sugar and ice and blend until completely smooth and thick. Add a little more milk if it is too dense to pour.

Taste
Adjust the sweetness — it should be gently sweet, letting the buttery avocado lead.

Layer the glass
For the stall look, drizzle a little date syrup or honey down the inside of a tall glass, then pour in the avocado.

Top and serve
Scatter generously with chopped almonds and walnuts and serve at once with a spoon and a straw.
Chef's tips
- Use properly ripe avocados — under-ripe fruit tastes grassy and won't blend to that silky richness.
- Serve immediately; avocado juice starts to discolour and thicken if it stands too long.
- The chopped-nut topping isn't a garnish afterthought — the crunch against the creamy juice is the whole appeal.
