Ginger & Lemon Warmer
A simple winter drink from Fes households, where fresh ginger is simmered with lemon and honey into a warming infusion, drunk hot to ward off the chill and soothe a sore throat during the cold months.

Ingredients
- 50 g fresh ginger, sliced
- 1 litre water
- Juice of 2 lemons
- 3 tbsp honey, or to taste
- A few mint leaves, optional

Simmer the ginger
Bring the water to a boil with the sliced ginger, then reduce to a simmer and cook 8–10 minutes to draw out its heat and aroma.

Strain
Strain out the ginger slices.

Sweeten
While still hot, stir in the honey until dissolved, then add the lemon juice.

Finish
Add a few mint leaves if using, letting them steep briefly.

Serve
Serve hot in glasses or cups, straining out the mint before pouring if preferred.

- Slice the ginger thinly so it releases its flavour quickly during the short simmer.
- Add the honey once the liquid has come off the boil and cooled slightly, since very high heat can dull honey's flavour.
