Essaouira Argan Oil Farm Visit — Women's Cooperative & Tasting

The argan tree grows wild in just one region of the planet — the Souss plains and the hills between Essaouira and Agadir — and the oil pressed from its nuts is central to both Moroccan cooking and Moroccan cosmetics. A farm and cooperative visit on the road out of Essaouira lets you see the whole chain, from the gnarled trees (sometimes with goats climbing them for the fruit) to the finished oil.

At a women's argan cooperative — the model that has given rural Amazigh (Berber) women income and independence — you watch the labour-intensive process by hand: cracking the hard nuts between two stones to reach the kernels, roasting them for culinary oil (raw for cosmetic), and grinding them on a stone quern to a paste that is pressed for oil. It takes hours of work for a single litre, which is why real argan oil is precious.

You taste the difference between the nutty, roasted culinary oil and the lighter cosmetic one, and try amlou, the spread of argan oil, roasted almonds and honey, on fresh bread. The visit is also a lesson in provenance: how to tell genuine cooperative oil from the adulterated bottles sold to tourists, and why buying from the cooperative supports the women directly.
