Merguez Flatbread with Whipped Feta

Merguez Flatbread with Whipped Feta

Ingredients

  • 2 large flatbreads or pizza-style bases
  • 3 merguez sausages, skinned and crumbled
  • 1 red onion, thinly sliced
  • 1 red pepper, sliced
  • 150 g feta
  • 100 g yoghurt or cream cheese
  • 2 tbsp olive oil
  • 1 tbsp harissa mixed with 1 tbsp olive oil
  • Fresh mint and parsley, to finish

Method

    Whip the feta

    Blend the feta with the yoghurt and a little olive oil until smooth and spreadable.

    Cook the merguez

    Fry the crumbled merguez with the onion and pepper until the sausage is browned and the vegetables softened.

    Assemble

    Spread the whipped feta over the flatbreads, then scatter over the merguez, onion and pepper.

    Bake

    Bake at 220°C for 10–12 minutes until the edges are crisp and golden.

    Finish

    Drizzle with the harissa oil, scatter with fresh herbs, and cut into slices to share.
