Date & Walnut Energy Balls

Blending Morocco's famous Medjool and Boufeggous dates with toasted walnuts and a touch of cinnamon makes a simple no-bake sweet, closely related to the date-nut pastes used to stuff other Moroccan treats but eaten on their own as a quick snack.

Ingredients

  • 250 g pitted Medjool dates
  • 100 g walnuts, toasted
  • 1/2 tsp cinnamon
  • 1 tbsp orange blossom water
  • Pinch of salt
  • Sesame seeds or shredded coconut, for rolling

Method

    Soften the dates

    If the dates are firm, soak them in warm water for 10 minutes, then drain well.

    Blend

    Pulse the dates, walnuts, cinnamon, orange blossom water and salt in a food processor until it forms a sticky, coarse paste.

    Shape

    Roll tablespoon-sized portions into balls between your palms.

    Coat

    Roll each ball in sesame seeds or shredded coconut to finish.

    Chill

    Chill for 20 minutes to firm up before serving.

Chef's tips

  • If the mixture feels too dry to hold together, add a date or two more rather than water.
  • These keep well in the fridge for up to two weeks in an airtight container.
