Chicken Msemen Wrap
A modern street-food take on the classic square flatbread, warm msemen is filled with spiced shredded chicken, a smear of harissa and fresh vegetables, then folded into a portable wrap sold at Moroccan food stalls and quick lunch counters.

Ingredients
- 4 pre-made or homemade msemen flatbreads
- 2 cooked chicken breasts, shredded
- 1 tsp cumin and 1/2 tsp paprika
- 2 tbsp harissa paste
- 1 tomato and 1/4 cucumber, diced
- Handful lettuce, shredded
- 2 tbsp olive oil

Season the chicken
Toss the shredded chicken with cumin, paprika, olive oil and a little salt. Warm through in a dry pan for 3–4 minutes.

Warm the msemen
Warm the msemen flatbreads in a dry pan for 1 minute per side until pliable.

Spread
Spread a thin layer of harissa across each warm msemen.

Fill
Top with the spiced chicken, diced tomato, cucumber and shredded lettuce.

Fold in the sides and roll tightly into a wrap.

Serve immediately while the msemen is still warm and pliable.
Chef's tips
- Warm the msemen just before filling — cold flatbread cracks when you try to fold it.
- Go easy on the harissa at first; you can always add more, but it's hard to tone down once it's in.
